Pork Chops with Gravy


This is from allrecipes.com.  I was looking for something different to do with pork chops.  It isn't anything grand, but they turned out pretty good.

Ingredients:


  • 1 tablespoon butter
  • 4 boneless pork chops
  • seasoned pepper to taste
  • seasoned salt to taste
  • 3 tablespoons all-purpose flour
  • 3 tablespoons sour cream
  • 1/4 cup milk
  • 1 tablespoon all-purpose flour
  • 1 teaspoon lemon juice
  • 1 tablespoon honey

  • Melt the butter in a large skillet over medium heat. Season the pork chops with seasoned salt and seasoned pepper, then dredge in 3 tablespoons of flour. Shake off any excess flour, and place the chops in the skillet. Cook for a few minutes on each side, until browned.

  • In a small bowl, stir together the sour cream, milk, 1 tablespoon of flour, lemon juice, and honey. Season with a tiny bit of seasoning salt if desired. Pour the sauce over the chops, and simmer for 10 to 15 minutes, until pork is cooked through.

Sweet & Sour Meatballs


These were really good!  The meatball recipe is my mother-in-law's and the sweet and sour sauce recipe I got from a girl in my ward.  What I liked most about it is I already had everything on hand.  Those recipes are the best.

Meatballs
1 lb ground beef
1 egg
1 tsp worchestershire sauce
¼ cup chopped onion
1/3 - 1/2 cup dry bread crumbs
2 T grated Parmesan cheese (the kind in a jar works fine)
½ tsp beef boullion
1 tsp minced garlic
½ tsp oregano
½ tsp salt
¼ tsp pepper
dash of Texas Champagne (Tabasco)
½ tsp Emerill’s original seasoning

Mix all ingredients together. Shape mixture by tablespoonfuls into 1 1/2” balls.

To cook in a skillet: Heat 1 tbl. oil in a large skillet. Cook the meatballs over medium heat until brown, about 20 minutes. Drain off excess fat.

To cook in the oven: Place the meatballs in a foil lined cookie sheet with sides. Bake uncovered in a 400 degree oven until light brown and cooked through; about 15 min. They are done when you touch them and they spring back.

*You can also freeze these.  Just cook as usual, wait for them to cool off a little, and put in a freezer bag.


Sauce
1/2 cup brown sugar
1/4 cup vinegar
1 tsp mustard
1/4 cup bbq sauce
1 tsp Worcestershire sauce

Combine all ingredients in saucepan.  Add meatballs and cook until heated through.  Serve over rice or noodles.

Italian Parmesan Chicken and Potato Bake


There are only two main ingredients in here: chicken and potatoes.  It's the little things that make it taste so good!  I boiled the potatoes and cooked and cut up the chicken in the morning, then right before dinner I put everything else in and cooked it.

Ingredients:


2-4 chicken breasts (if using more chicken, then just add a little more dressing and seasonings)
1-1/2 lb. potatoes (I used 5 but they were kind of small), cut into thin wedges
1/4 cup Italian dressing
1/4 cup grated Parmesan cheese
1 tsp. Italian seasoning
paprika
black pepper

Preheat oven to 400°F. Boil potato wedges until easily stabbed with a fork. In a skillet, brown chicken and sprinkle with paprika and black pepper to taste.

Place chicken and potatoes in 13x9-inch baking dish. Top with dressing; sprinkle with cheese and Italian seasoning. Cover with foil.

Bake 30 min or until chicken is done (165ºF), removing foil after 15 min.

Light Wheat Bread


Making bread has kind of been the one thing that I have never been able to get right.  I finally figured out a little while ago that it's because I have a KitchenAid and not a Bosch (a mixer that's better made for mixing bread dough).  My sister has a Bosch and her bread always comes out great, but when I try the same recipe it turns out flat on top and dense.  My mother-in-law has a KitchenAid and has been trying to find recipes that will work well with it.  She got a couple from a lady in her ward and forwarded them on to me, and this is one of them.  It turned out so good!  I just made them yesterday and the second loaf is almost gone already.  It makes great sandwiches and is also good to have just a slice with butter and honey.  I'm so excited to have a good bread recipe!

Ingredients:
2 ½ cups warm water (~110 degrees)
1 ½ T yeast
1 T sugar
6-7 cups whole wheat flour (I use half white and half wheat flour)
1/3 cup honey
1/3 cup vegetable oil
1 ½ T dough enhancer
1 T wheat gluten
2 ½ tsp salt
1 tsp oil if kneading by hand



In bowl of stand mixer, put on the paddle attachment*.  Pour into the bowl warm water, yeast, sugar and 2 cups of flour.  Mix to combine.  Cover with a towel and let sit for 15 minutes. 

Add the honey, oil, dough enhancer, gluten, salt and 3 cups of flour, mix well.  

Switch to a dough attachment*, then adding about ¼ cup at a time, run the mixer on low until the dough begins to clean the sides of the mixing bowl.  Dough should be smooth, elastic and still tacky to the touch.  If you add too much flour, the dough will be stiff and too dry.

If kneading by hand, knead 7-10 minutes, or until the dough is smooth, elastic and small bubbles or blisters appear beneath the surface of the dough.  Use the tsp. of oil on your hands to keep the dough soft.

If kneading by a stand-up mixer*, once flour is incorporated, mix on medium for 10 minutes.

Form the dough into two loaves and divide into 2 large loaf pans that have been sprayed with Pam or greased.  Spray or lightly grease the top of the dough also.

Allow to rise in a slightly warmed oven or other warm place until doubled in size; about 30-60 minutes.

Preheat oven to 350 degrees.  Remove covering and bake 25-30 minutes or until golden brown and breadsounds hollow when thumped.  Remove bread from pans, place on rack; brush with butter and allow to cool.

S'mores Rice Krispy Treats


I got this recipe from my sister and took it to the in-laws for dessert yesterday.  They were a big hit!

Ingredients:

1 cube butter
1 lb bag mini marshmallows
5-7 c rice crispies
1 pkg graham crackers (about 10-12 full crackers) broken in pieces
1 c milk chocolate chips

Grease 9x13 pan.  Set aside 1 cup of marhmallows.  In a large saucepan over medium heat, melt butter.  Add remaining marshmallows and stir over heat until the marshmallows begin to lose their shape.  Remove from heat and add cereal and graham crackers.  Add reserved cup marshmallows and chocolate chips.  Stir quickly becasue you don't want the marshmallows or choc chips to melt.  Pour into prepared pan.  Cool and serve.

Italian Meatloaf


Ingredients:

2 lbs uncooked ground meat
1/2 cup chopped onion
garlic to taste
Italian Seasonings
1/2 cup bread crumbs
1 egg
spaghetti sauce (we prefer bbq sauce)
8 oz of your fav cheese



Combine first 6 ingredients.  Put half the mixture in a loaf pan, place sliced cheese on top, then put the rest of the meat mixture on top of that.  Pour sauce on top and cook covered at 350 degrees for 1 hour.
